Paprika is a spice made from dried and ground red peppers. It is traditionally made from Capsicum annuum varietals in the Longum Group, which also includes chili peppers, but the peppers used for paprika tend to be milder and have thinner flesh.
The spice can range in flavor from mild and sweet to very hot. Domestic paprika is characteristically mild, sweet and vegetable-like. Some Spanish paprikas are dried by smoking and thus have a smoky flavor. Some varieties, such as Hungarian, can exhibit pungent (hot) characteristics.
PAPRIKA FLAVOR
With fruity, slightly sweet notes and vivid red color, it brightens almost any dish. Use it in rubs and marinades, as a garnish for egg and fish dishes, or as a showstopper in chicken paprikash.
Paprika varies in flavor based on what types of peppers are dried and pulverized. The spice can range from mild to spicy, a little sweet to 100% savory.
